Oaty Pancakes PDF Print E-mail

This is a healthier alternative to the traditional pancake as they contain fibre and protein.  These were a big hit with a pre teen who would normally reject out of hand any food with a "healthy" tag!!  They are incredibly light to eat and more-ish!  They are good for breakfast.  Make little ones and add to lunch box.

2 cups milk

1 tblsp of lemon juice

1 cup oat bran

1 tblsp of caster sugar

2 eggs

Add lemon juice to milk and leave to stand for 10 - 15 mins, or until milk thickens.

Place all ingredients in blender or food processor and process until well combined.  Leave to stand for 30 minutes or overnight.  If mixture is too thick add a little water or ordinary milk.

Grease a non-stick pan and cook like normal pancakes ( make smaller than normal ones ).

Serve with favourite toppings.
